Sattu Sherbet, Bihari CuisineSattu Sherbet is one of the most popular, traditional, healthy summer drinks from Bihar and Uttar Pradesh. Sattu is roasted gram flour. Sattu is full of nutrition with cooling properties, rich in soluble fibre, high in protein and good for the digestive system. In fact, it is considered a detox food that cleanses the system and aids in weight loss.

Sattu Sherbet is a traditional, nutrition rich gem among summer drinks. There are two versions of sattu drink - meetha (sweet) and namkeen (savory). It is an energizing drink that not only quenches our thirst but also protects us from heat strokes due to intense summer heat. Called a poor man"s food, the humble sattu is packed with nutrients and is actually a wonder food with loads of health benefits.

Sattu Namkeen Sherbet
Sattu namkeen sherbet is a salted version where black salt, black pepper, roasted cumin powder, lemon juice and mint leaves are used.

Ingredients:

•Sattu flour - 3 tbsp
•Water - 1 glass chilled
•Lemon - 1, small
Mint leaves - 8 , crushed or finely chopped
Coriander leaves - 8
•Black salt - 3/4 tsp
•Roasted cumin and dry chilli powder - 1/2 tsp
Black pepper powder - pinch
Salt - 1/4 tsp

Method:

•Take a vessel, add sattu flour and water and mix well.
•Add juice of lemon, crushed mint leaves, coriander leaves, black salt, roasted cumin and chilli powder, black pepper powder and salt and mix well.
•Pour into glasses, add ice cubes and serve.

Tips:

•One can add 2 tbsp of chopped onions or finely chopped raw mango as garnish.
•A tsp of ginger juice can also be added.
•One can add 1/4 tsp chaat masala or Jaljeera masala powder.
•Finely chopped green chilli can be used instead of black pepper powder.

Sattu Sherbet, Bihari CuisineSattu Meetha Sherbet Ingredients:

•Sattu flour - 2 tbsp
•Jaggery - 2 tbsp
•Black Salt - 1/2 tsp
•Lemon - 1
•Water -1 glass

Method:

•Take sattu and jaggery in a glass.
•Make a smooth paste first, adding a little water, to avoid lumps.
•Now, fill the glass with chilled water, add salt and the juice of half a lemon.
•Sattu Sherbet is ready to serve.

Tips:

•One can use mishri or honey or date syrup in place of jaggery.
•Black salt gives a unique flavour to the drink.
