Rice Kheer
Rice Kheer is a delicious preparation and nutritious at the same time. It is consumed as a single dish and is also served as a side dish with roti.

Rice KheerRice Kheer is a scrumptious dessert which is quite popular among the food lovers. The kheer is nutritious and is good for health. It is basically rice and milk based preparation. Other common ingredients that are required for making this yummy desert are ghee, sugar, almonds etc. It is easy to make and can be prepared at home.

Ingredients of Rice Kheer

•Half cup of creamed rice
•Eight cups of milk
•Half cup of ghee
•A pinch of saffron
•One tablespoon of sliced almonds
•One tablespoon of charole nuts (optional)
•One-fourth teaspoon of cardamom
•One cup of sugar

Method of Preparing Rice Kheer

•Soak the saffron in one tablespoon of milk for ten minutes.
•Heat a medium sized pot and after some time add ghee.
•Stir in the creamed rice and keep stirring until it turns light brown and leaves out a fragrance.
•Pour in the milk and soaked saffron and to it add, the almonds, charole nuts, cardamom and sugar. Boil it for some time and keep stirring to prevent the formation of lumps.
•Cook and stir as it thickens for nearly two to three minutes. Turn off the heat and cover until it is ready to serve.

Rice Kheer can also be prepared using jaggery. The preparation method is as follows:

•Half cup small-grained fragrant rice
•Half cup jaggery
•One and half litres milk
•Two bay leaves
•Two green cardamoms, split
•Twelve cashew nuts, broken into half
•Half cup raisins
•One tsp ghee

Method of Preparing Rice Kheer

•Shallow-fry the cashew nuts and the raisins in ghee separately, till light brown.
•Pour the milk, bay leaves and green cardamoms in a skillet pan. Bring the milk to a boil, stirring from time to time.
•Add the drained rice, immersed in one cup water for half hour. Add the fried cashew nuts and raisins.
•Cook for one hour on low flame, stirring occasionally.
•Switch off the gas and wait for five min.
•Add the jaggery when the preparation is cold. Mix well.
•Serve chilled.

Rice Kheer is usually served after the main meal. However, it can also be eaten as a side dish with roti. This yummy dessert is popular during festivals like Bhai Phonta, Ganesh Chaturthi, janmashtami, Raksha Bandhan, birthday etc.
