Gujiya
Gujiya is an Indian sweet which gains immense popularity during the festival of Holi.

Gujiya, Indian SweetGujiya is a popular Indian desert though it is not an overly sweet dish. It has a crispy and flaky exterior with a sweet filling. The recipe is quite popular during the festival of Holi.

Ingredients of Gujiya

•250 grams flour
•500 grams khoya
•Raisins
•100 grams almonds (finely chopped)
•3 tablespoon cooking oil
•100 ml water
•250 grams sugar

Method of Preparing Gujiya

•Mix the oil and flour properly to form a binding consistency of breadcrumbs. Add some water and knead lightly the entire mixture. Make it soft dough and set it aside with a damp cloth covering it.
•Fry the khoya in little ghee till it becomes light brown and then mix the sugar in it properly.
•Add the almonds and raisins, and fry for a few more minutes. Remove from fire and let it cool.
•Make very small thick chapattis out of that kneaded dough.
•Fill half of the chapatti with the khoya mixture and, then, seal the sides of the chapatti keeping the khoya inside it.
•Make the sealing look decorated by giving a look of hemming.
•Deep-fry these gujias until they become light golden brown, keeping the flame at low.
•Take out the gujias on a newspaper and let the oil get soaked.
•Serve hot.

Gujiya can also be made without khoya. The ingredients and preparation method are as follows:

Gujiya, Indian Sweet Ingredients of Gujiya

•1.5 cup maida
•6tbsp ghee
•1/4tsp baking soda
•2tbsp powdered sugar
•Water as required

For Filling

•1.5 cup grated coconut
•10 cashew and raisins (chopped finely)
•1/2tsp cardamom powder
Ginger powder a pinch
•3/4 cup sugar
•1tbsp ghee for deep frying

Method of Preparing Gujiya

•Mix maida, baking soda, powdered sugar and ghee into a bowl. Mix till it resembles a texture same as bread crumbs. Add little water and knead into soft dough. Keep aside.
•Heat 1 tbsp ghee in a pan and fry cashews and raisins. Add freshly grated coconut to the ghee and fry.
•Add illachi powder and ginger powder.
•Take out this coconut mix to a bowl and add sugar and fried nuts to it. Keep aside.
•Now take the dough and make small puris, put it inside the gujia maker.
•Fill the puri with the coconut filling.
•Dip fingers in water and moist the edges of gujia. Close the gujia maker and press, remove the excess dough.
•Prepare all gujias in the same way.
•Heat Ghee in a kadai and deep fry these gujias on medium flame.
•Serve hot.

This sweet dish is easy to prepare and one can make it at home also. Gujia is an interesting idea to sweeten the tooth of the guests when invited at some occasion or celebration. One can store the Gujiya in an airtight container for using it on that special day.
