Gondhoraj Ghol, Ancient Recipe of West BengalGondhoraj Ghol is a curd based drink similar to lassi but with thinner consistency. It is a perfect drink for summer season. Bengal limes are called "Gondhoraj Lebu" in Bengali. Gondhoraj lemon has a very subtle aroma. All the fragrance which it is famous for is in its skin. Its flavour is very similar to Kafir lime, which is widely used in Thai cuisine. It is very widely used by bengalis; a little dash of its juice adds lot of flavour to any dish, or even to normal daal and rice. "Ghol" to Bengal is what "Lassi" is to Punjab; except that Lassi is thick creamy and delicious while Ghol from the east is absolutely thin so that its consistency is like buttermilk.

Ingredients for Gondhoraj Ghol:

•Curd - 400 ml
•Sugar - 6 tbsp
•Ice Cold Water - 400 ml
•Juice of 1 Gondhoraj Lime
•Zest of 1 Gondhoraj Lime
•Black Salt - 1/2 tsp

Method:
1. Take the curd, sugar, lime juice, zest of the lime, water and black salt together in the blender and blend well.
2. Pour it into glasses and top with some more Gondhoraj Lime zest.
3. Serve chilled.
