Gatte Ki SabjiGatte Ki Sabzi is a traditional recipe of Rajasthan and is an integral part of Rajasthani thali. Like other Rajasthani cuisines, this recipe also contains various ingredients such as besan, dhaniya, red chilly powder etc. This delicious dish can be teamed up with puris, chapati or steamed rice.

Ingredients of Gatte Ki Sabji

•Besan 200 gm

•Dhaniya 1 tsp

Ghee 2 tbsp

Curd 250 gm

Salt 1 tsp

•Oil 2 tsp

•Red chilly powder 1 tsp

Haldi a pinch

Method of Preparing Gatte Ki Sabji

•Mix besan while adding half tsp. salt, half tsp red chilly powder, half tsp. dhaniya powder and ghee. Make stiff dough.

•Make 5-6 thin and long strips of the dough.

•Put these strips in boiling water and cook for 5 minutes.

•Cut these gattas into small pieces.

•Strain the curd through a strainer.

•Add half tsp. salt, half tsp red chilly powder, half tsp. dhaniya powder and haldi to the curd. Mix well.

•Now add the gatta pieces.

•Heat oil in a kadahi.

•Put the tadka of jeera and add the curd mixture.

•Cook it for 5-7 minutes while stirring continuously till it comes to a boil.

•Simmer the flame and cook for another 5-7 minutes. Turn off the gas.

•Finally put the tadka of red chilly powder.

•Serve hot.

Gatte Ki Sabji Ingredients of Gatte Ki Sabji without Curd

•Besan 200 gm

•Ghee/oil 2 tbsp

•Dhaniya powder dry 1 tsp

•Black pepper powder 1/2 tsp

•Oil 3-4 tsp

•Haldi a pinch

•1 tsp green chilly finely chopped

•2 finely chopped onions

•Tomato puree of 2 tomatoes

•1 tsp finely chopped garlic

•Half tsp garam masala

•2 -3 cups water depending on the requirement.

•1 tsp chopped green coriander leaves.

•Pinch of hing

Salt to taste

Method of Preparing Gatte Ki Sabji without Curd

•Mix besan while adding half tsp. salt, half tsp black pepper powder, half tsp. dhaniya powder and ghee/oil. Make stiff dough.

•Make 5-6 thin and long strips of the dough.

•Put these strips in boiling water and cook for 5 minutes.

•Cut these gattas into small pieces.

•Put oil in kadai, add hing, add garlic, green chilli, and ginger to it. Then add chopped onions, when onion turns brown add tomato puree, then add half tsp. salt, half tsp garam masala, half tsp. dhaniya powder and haldi to it. When it leaves oil it is done.

•Add the gatta pieces to it. Add water to the kadai.

•Cook it for 10-12 minutes on simmer gas.

•Turn off the gas. Garnish it with chopped green coriander leaves.

•Serve.

Gatte Ki Sabzi can be found in various restaurants of Rajasthan. This preparation is nutritious and healthy. It is also an ideal side dish for serving the guests.
