1. Plain Coffee Ingredients

Method
Sugar and coffee should be mixed and few drops of water should be added and churned well till it becomes fluffy. After adding 2-3 drops of water and churning till it turns more creamy, fluffy and creamish in colour, 1 tbsp of coffee has to be added in each of the two cups. The milk has to be boiled and poured in the cups. A pinch of chocolate powder can be added and then served hot.

2. Iced Coffee Ingredients

•4 cups of cold milk
•One-fourth cup of instant coffee
•One-fourth cup of sugar Method
•One-fourth cup of hot water
•Ice

Method
The coffee, sugar and hot water should be mixed until the coffee and sugar has dissolved. Then 4 cups of cold milk has to be mixed and blended. The Iced Coffee can be served with ice cubes.

3. Coffee Cherry Almond Cake Ingredients

•1 cup of Sour Cream
•3 Eggs
•Powdered sugar glaze
•1 packet French vanilla cake mix
•One-fourth cup of Water
•1 cup of crushed strong instant coffee
•1 can Cherry pie filling
•Half cup of Almond slices

Method
The cake mix, sour cream, egg and water should be mixed together. Then the mixture should be poured into greased 15X10 inch baking tin and spoonfuls of cherry pie filling has to be dropped onto the mix. One has to bake it for 25-30 minutes until golden and sprinkle with almonds and glaze.

4. Espresso Biscotti Ingredients

•2 tablespoons of ground espresso powder
•Half teaspoon of baking soda
•1 teaspoon of vanilla
•Half teaspoon of salt
•2 cups of all-purpose flour
•Half teaspoon of baking powder
•Half teaspoon of ground cinnamon
•3 large eggs
•1 cup of sugar
•2 tablespoons of grated orange zest
•Three-fourth cup of natural almonds, toasted and chopped

Method

Mix together the all-purpose flour, ground espresso powder, cinnamon, baking soda, baking powder, sugar, salt and orange zest in a bowl with an electric mixer. In another bowl, beat together the eggs and vanilla. Add the mixture at once to the dry ingredients and beat until dough is formed. After stirring the mixture in the toasted chopped almonds, turn the dough out onto a floured board and knead it into a ball. Equally divide into two and form each half into a log 12 inches by 2 inches. Arrange the log on a buttered and floured baking sheet approximately 3 inches apart. Half bake the logs for 45 minutes, remove from the oven and allow it to cool. Then cut the log into 1inch thick slices and place it on baking sheet. Lastly bake for 10 minutes on each side or until its crisp.

•1-cup strong coffee
•1-cup hot chocolate
•2 orange slices
•Whipped cream
•Dash of cinnamon

6. Coffee Ice Cream Ingredients

•1 1/2 cups whole milk
•3/4 cup sugar
•1 1/2 cups whole coffee beans
•Pinch of salt
•1 1/2 cups heavy cream
•5 large egg yolks
•1/4 teaspoon vanilla extract
•1/4 teaspoon finely ground coffee

Method
Heat the milk, sugar, whole coffee beans, salt, and 1/2 cup of the cream in a medium saucepan until it is quite warm and steamy, but not boiling. Once the mixture is warm, cover, remove from the heat, and let steep at room temperature for 1 hour. Pour the remaining 1 cup of cream into a medium size metal bowl, set on ice over a larger bowl. Set a mesh strainer on top of the bowls. Reheat the milk and coffee mixture, on medium heat, until steamy but not boiling. In a separate bowl, whisk the egg yolks. Slowly pour the heated milk and coffee mixture into the egg yolks, whisking constantly so that the egg yolks are tempered, but not cooked by it. Scrape the warmed egg yolks back into the saucepan. Stir the mixture constantly over medium heat with a heatproof, flat-bottomed spatula, scraping the bottom, until the mixture thickens and coats the spatula. Pour the custard through the strainer and stir it into the cream. Press on the coffee beans in the strainer to extract as much of the coffee flavor as possible. Then discard the beans. Mix in the vanilla and finely ground coffee, and stir until cool. Chill the mixture thoroughly in the refrigerator, and then freeze it in ice cream maker.

•1/3 cup sugar
•4-1/2 tsp instant coffee granules
•1-1/2 tsp ground cinnamon
•3 tbsp butter, softened
•1/2 cup sugar
•1 egg
•1 tsp vanilla extract
•1-1/2 cups all-purpose flour
•1 tsp baking powder
•1/2 tsp baking soda
•1/8 tsp salt
•1 cup plain yogurt
•2 tbsp chopped walnuts

Method
In a small bowl, combine the sugar, coffee granules and cinnamon; set aside. In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Beat in egg and vanilla. Combine the flour, baking powder, baking soda and salt; add to butter mixture alternately with yogurt, beating just until combined. Spread half of the batter evenly into a 9-in. square baking pan coated with cooking spray; sprinkle with half of the reserved sugar mixture. Repeat layers; cut through batter with a knife to swirl. Sprinkle with nuts. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes on a wire rack. Serve warm.

8. Coffee Pancakes Ingredients

•1 cup whole wheat flour
•2 tbsp sugar
•1 tsp baking powder
•1 tsp baking soda
•One-fourth tsp salt
•1 cup low-fat buttermilk
•1 large egg
•2 tbsp instant coffee granules
•1 tbsp unsalted butter, melted and cooled

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt; set aside. In a medium bowl, whisk to combine the buttermilk, egg, instant coffee, and cooled, melted butter. Using a spatula, add the wet ingredients to the dry and mix to combine. Preheat non-stick skillet over medium heat. Once hot, ladle 1/4 cup batter onto the hot surface and spread to a 5-inch diameter. After 2-3 minutes flip the pancake and cook for 1-2 minutes. Repeat with remaining batter and serve hot.

•1 cup raw cashews
•1.5 cups over-ripe banana

•1 1/2 tbsp water/milk

Brownie Cups Ingredients:

•1 cup raw almonds
•1 cup pitted dates
•1/3 cup raw walnuts
•1/3 cup cocoa powder
•1/8 tsp salt
•1 tbsp water

Method
The mousse: Put the nuts in a cereal bowl with enough water to cover them. Let soak 4-6 hours. Drain completely and pat dry. Mash the banana, then combine all ingredients in a food processor and blend until a smooth consistency.

The brownie cups: Combine the almonds, walnuts, dates, cocoa, and salt in a food processor. Process until mixture turns to small crumbles. Add 2 tbsp water to achieve slightly-sticky dough and then process again until it sticks together in one big ball. Make small balls and press to give a shape of a cup. Freeze 20 minutes, then fill with the mousse. Refrigerate until ready to serve.

1/2 cup cold water
2 cups strong coffee, hot.
1 can (14 oz) sweetened condensed milk
3 packages of unflavoured gelatin

Method
Place 1/2 cup cold water in a bowl. Sprinkle gelatin over the water. Let sit until the gelatin blooms, about 10 minutes. Stir in the hot coffee and mix until the gelatin is completely dissolved. Stir in the can of sweetened condensed milk. Pour into glass pan. Thickness of finished jello depends on the size of the pan. Let it freeze for 6hrs. Cut into cubes and serve.
