Chatu Besara, Oriya RecipeChatu Besara is a yummy nutritious vegetable dish mostly popular in the Odisha state of India. The primary ingredients required to prepare this dish mainly comprise of mushroom, turmeric powder, tomato, dried mango etc. Chatu Besara is very healthy as the main ingredient mushroom is enriched with vitamins and minerals. It fights cancer, lowers blood glucose, reduces the risk of gout, and keeps the heart healthy. Mushroom also plays a key role in building immune system. Owning to mushroom`s various nutritional values; this dish is also relished in other parts of India. Chatu Besara is easy to make and can be prepared even at home.

Ingredients of Chatu Besara

•Two hundred gm mushroom
•One tablespoon turmeric powder
•Three tbsp mixed paste of one onion, eight garlic cloves, one tbsp mustard seeds and four red chillies
•Two sliced tomato
•One dried mango slices
•Two sliced green chilli
•Four to five tsp mustard oil
Salt to taste

Method of Preparing Chatu Besara

•Clean the mushroom and cut into small pieces.
•Soak the mushroom with water and turmeric powder for 5-10 minutes. Keep aside.
•Heat the pan and add 1 tsp mustard oil.
•Squeeze the mushroom from water and fry in the pan, fry till they become golden brown in colour. Keep aside.
•Add 3 tsp mustard oil in a pan and cumin seed. When they start spluttering, add the mixed paste, turmeric powder and salt. Stir them for 1 min.
•Add fried mushroom, sliced tomato, dried mango slices and sliced green chilli, keep stirring.
•Now, add 1/2 cup water.
•Cover it with a lid and allow it to boil for 5-10 minutes in low flame.
•Open the lid, fry till water gets evaporated, don`t make it too dry.
•Serve.

This delicious dish is usually served as a side dish. It can be paired up with steamed rice and roti. The combination can be consumed as a lunch food item and also dinner. This scrumptious dish is an ideal way to flatter the stomachs of guests when invited at home during various occasions.
