Buttermilk also known as "Chaas"; is one of the popular Indian beverages and a summer cooler made with curd. It is made all over India with some variations. Chaas is not only a cooling drink but also aids in digestion. The Chaas is only flavored with roasted ground cumin and black salt. Black salt, cumin and coriander leaves all aid in digestion and yogurt is good for the gut. Hence many people have it with their meals. It is also served in traditional thali meals in many restaurants.
In North India, usually "Salted Chaas" is taken whereas in some parts of India "Masala Chaas" is more popular. One can make masala Chaas by adding few spices. The spices and herbs which are often added in spiced Chaas are asafoetida, fennel, ginger juice, curry leaves or coriander leaves, etc. They all help in digestion of food and also uplift the energy levels in the dry hot summers. Another variation is "Pudina Chaas" which is flavored with mint leaves.
Ingredients for Buttermilk:
•Plain Yogurt or Curd - 1 and 1/2 cup
•Roasted Cumin Powder - 1/2 tsp or add as required
•Chilled Water 5- 2 cups
•Ice Cubes - few for serving
•Black Salt - 3/4 tsp or to taste
•Coriander Leaves - 1 tbsp, chopped for garnish
Method:
1. Take all the ingredients in a blender jar, except the coriander leaves.
2. Just pulse the blender for some seconds till everything is blended well and the mixture becomes frothy.
3. Pour Chaas in glasses.
4. Garnish with coriander leaves and serve "Chaas" immediately.
Notes for Buttermilk
One can make Chaas ahead of time and keep in refrigerator. Just before serving, stir and pour in the glass. It tastes best when served chilled. The Buttermilk stays good for 1 or 2 days in refrigerator. Enjoy any time of the day during hot summer. It is usually served along with the meal.
