Bhaat Na Rasawala Muthia is a traditional Gujarati curry, made from leftover rice or khichdi which is also called "Rasiya Muthia". It is a popular dish of Gujarati Cuisine and is one of the most interesting ways to use leftover rice or khichdi. It is a perfect light meal in the evenings. Muthia are made from cooked rice and simmer in yogurt-spices gravy. Muthias a common staple in every Gujarati home is made by steaming dumplings of mashed rice combined with vegetables and spices.
Ingredients for Muthia:
•Cooked Rice - 1 cup
•Besan - 2 tbsp
•Wheat Flour - 2 tbsp
•Green Chilli - 1, finely chopped
•Ginger Paste - 1 tsp
•Turmeric Powder - 1/2 tsp
•Red Chilli Powder - 1/2 tsp
•Coriander Powder - 1/2 tsp
•Salt to taste
•Sugar - 1/2 tsp
•Lemon Juice - 1 tsp
Ingredients for Rasa or Gravy:
•Curd - 1/2 cup
•Water - 2 cups
•Red Chilli Powder - 1/2 tsp
•Turmeric Powder - 1/2 tsp
•Cumin Powder - 1/2 tsp
•Coriander Powder - 1/2 tsp
•Salt to taste
•Oil - 1 tbsp
•Mustard Seeds - 1/2 tsp
•Cumin Seeds - 1/2 tsp
•Ginger Paste - 1/2 tsp
•Green Chillies - 1, finely chopped
•Curry Leaves - 4 to 5
•Coriander Leaves - 2 tbsp, finely chopped
Method:
1. Take cooked rice, besan, wheat flour, chopped green chillies, ginger paste, turmeric-chilli-coriander powder, salt, sugar and lemon juice in a bowl. Mix well and make dough kind of mixture without adding any water.
2. Shape the small sized muthias into cylindrical shapes and keep it aside.
3. Take curd and add turmeric, red chilli, cumin and coriander powder with salt in a bowl. Mix well and make thin batter by adding water.
4. Heat the oil in a pan. Add mustard seeds and cumin seeds, let them sizzle.
5. Then saute in green chillies and ginger paste. After that add curry leaves.
6. Then add prepared yogurt mixture and bring it to a boil.
7. Make sure that heat is on medium-high. Once it starts boiling, add muthia one by one.
8. Let it boil and keep cooking, if it dries up then add more water and keep boiling till muthias are cooked. It took me 15 minutes, but depends on the size of the muthia.
9. Once cooked, turn off the stove, garnish with chopped coriander and serve.
Tips for Bhaat Na Rasawala Muthia
•Do not add muthia before boiling the gravy, otherwise muthia will break and spoil in the curry.
•One can add onion-garlic in muthia mixture as per taste.
•If required then add more 1-2 tbsp besan in mixture.
•Do not add water in dough mixture.
